Coronation Chicken Poppadom Canapés

Coronation Chicken Poppadom Canapés are wonderfully flavourful and rather exotic, fun to make and very quick.

hors d’oeuvres and plenty of drinks are all you need to make your party shine
These hors d’oeuvres need only a handful of ingredients, are full of flavour and are guaranteed to please guests.
Three very easy recipes to follow
The one rule to remember with these, or any canapés, is that the base must be sturdy enough to hold the topping, so that each one is easy to pick up and eat.
Coronation Chicken Poppadom Canapés
Mini poppadoms are sold in packets at any good supermarket. Use chicken breast meat if you can: cook it in advance and let it cool, or, if time is short, buy freshly cooked chicken from the deli counter at Waitrose, as I often do.
Ingredients:
- Cooked Chicken Breast
- Mayonnaise
- Curry Powder
- Tomato Purée
- Lemon Juice
- Black Pepper
- Ready bought packet of Poppadoms
To assemble
- Cut cooked chicken into small pieces
- Put chicken in a bowl
- Then add mayonnaise, curry powder, tomato purée, lemon juice and black pepper
- Mix everything together
When ready to serve
- Spoon a teaspoon of the coronation chicken mixture into each poppadom
- Garnish with a coriander leaf
Serve hors d’oeuvres on neutral platters wherever possible, so that they really stand out. These are fun to make and very quick.
