Ham, Cheese & Tomato Sandwich Recipe
Another afternoon tea favourite, and still one of the most popular sandwiches of all.

The origin of the ham and cheese sandwich is rather debatable
The story goes that Patrick Connolly, an 18th-century Irish immigrant to England, combined the remains of a pig, cured and sliced, with a topping of Leicester cheese in a bread roll. It was aptly named a Connolly after its inventor, and is still called that in some parts of the Midlands.
The traditional ham and cheese sandwich has since evolved to include other fillings such as pickles, tomatoes and salad.
Tomatoes and a hint of English mustard are my additions: the mustard gives the sandwich a little extra bite. Wholegrain mustard works equally well if you prefer less heat.
